Potato Soup

Ingredients
1/4 cupbutter
2 T.small onion, diced
2 T.all-purpose flour
8 mediumpotatoes, peeled and cubed
4 cupschicken bouillon
2 cupsmilk, 1% or 2%
1 half-and-half cupsalt
1 tsppepper
bacon bits, for garnish
grated cheese, for garnish
Instructions
Melt the butter in a 4-quart saucepan. Whisk in the flour and cook over medium heat until dissolved, about 5 minutes. Add the bouillon cubes, potatoes, and hot milk; bring to a boil. Reduce heat and simmer until the potatoes are tender, for 15 minutes. Add half-and-half, salt and pepper. Cook on low for 1 minute. Serve soup into bowls and top with bacon bits and cheese, if desired.
