ROASTED CABBAGE

Ingredients
1 tsalt
1/4 tpepper
1 tsugar
3 Tvegetable oil
2 tbalsamic vinegar
Instructions
1. Prep cabbage. Quarter 1 medium head of green cabbage, leaving core intact. Cut each into 1-inch wedges.

2. Roast wedges. Adjust oven rack to upper middle position. Preheat oven to 450°. Combine salt, pepper, sugar, and oil in small bowl. Brush all cabbage wedges with mixture. Arrange on rimmed baking sheet in single layer. Roast until edges are lightly browned and tender, about 25 minutes.

3. Serve. Drizzle with vinegar.
Note: This is a delicious and sophisticated new way to eat cabbage.
