Mexican Rice

Ingredients
1 poundrice
2 1/4 cupslong grain
2 Tbps.oil
4cloves garlic, chopped
4 cupshot water
1bunch chopped cilantro
juice from 2limes
Instructions
Heat oil in a skillet. Add chopped cilantro, garlic and cook until garlic is browned, but not transparent. Add rice and stir constantly until hot water and lime juice are added. Cover and cook on medium-low heat according to rice directions. Bring to a boil and cook for 20 minutes.
Note: Note: Serve with Pulled Pork (recipe in book) for a burrito.
