VEGETABLE TIAN

Ingredients
2 Tbsp.olive oil
1large yellow sweet onion, sliced
2 clovesgarlic, minced
1-2russet potatoes, unpeeled
1zucchini
Instructions
Preheat oven to 375 degrees. Heat 2 Tbsp. olive oil in a large skillet over medium heat. Add the sliced onion, garlic, and cook until translucent, about 8 seconds. Add the unpeeled potatoes, zucchini and cook for 60 minutes. Once hot, sauté on the bottom of the pan. Add mixture on top of potatoes, making a spiral layer. Season with salt, sea salt, and dried thyme to taste. Drizzle olive oil over the dish and cover with foil. Bake for 25-30 minutes, then uncover and bake another 5-10 minutes until tender. Uncover the dish and sprinkle grated Parmesan cheese on top.
